James Hampson

Head Chef

James First joined our team back in August 2020, coming to help out, later taking on the role of our Head Chef. Born & raised in the West Midlands, James attended College of Food Birmingham before heading off to London to train. James’s first major turn to his cheffing career was working at Le Gavroche, where he trained for over a year, during this time, Micheal Roux Jr still held down 2 Michelin stars at the restaurant. Following James’s training and a degree in Culinary Arts Management (BA Hons) back at the College of Food Birmingham, James went on to live in Padstow, working in Rick Stein's Seafood Restaurant for 5 years, where he continued to learn the trade, thus inspiring James’s amazing knowledge of fish preparation and dishes. Returning back home to the Midlands, James took on various roles, starting with The Royal Shakespeare Company for 2 years before moving onto The Townhouse, Stratford, where he drove the team to win various awards, including 2 AA Rosettes. Since then James has driven many kitchens around Midlands, training and inspiring other chefs with his great aptitude. Based at The Holly Bush, he hopes to continue his amazing flair with seasonal restaurant style dishes, while all produce is made fresh in house.

In addition to our magnificent interiors, we also offer a fantastic outdoor dining space that's great for alfresco dining all year round, or a lovely grassed area for your children to play our outdoor games while you chill and unwind! Coming soon to our picturesque is our upper decking where we are hoping to have a have a great adults only area. 


Christian Mason-Baker
Senior Sous Chef

Christian is our latest addition to our team, we like to think of him as our secret ingredient. Christian has always lived around the Midlands. He started his kitchen life young while learning the foundations of cooking in Redditch College. Soon after completing college Christian bagged himself a job working for Gordon Ramsey, where his talent was very soon recognised,  Gordon soon transferred Christian over to Petrus, one of Ramsey’s Michelin Star kitchens. Christian worked for Ramsey across many of his new business start ups and Michelin star kitchens. Christian further went onto work at La Trompette in Chiswick, London. Another well known French style restaurant that soon won a Michelin star after opening up. Since then Christian has worked in many other great restaurants around the country inclusive of many different stages for top chefs, such as Marcus Wareing and Le Manoir with Raymond Blanc. Christian came back to the midlands where he has worked in many different top establishments, as well as The Townhouse with James when they won their awards. Christian is overjoyed to be in our team, this is reflected in the care, dedication and energy he puts into his food daily.

Marek Kluba
Chef de Partie

Marek is our young aspiring chef of the brigade, still studying while he works. Marek started off at Redditch College, learning practical cookery before entering the life of work in various different chain restaurants. Marek started at The Holly Bush in January 2018, just before the current owner acquired the business. Although Marek has been through a whole world of change in the types of food served and prepared in the kitchen here he has come on from strength to strength. Marek is currently studying his level 4 sous chef apprenticeship to enable him to grow and expand with the business. You’ll always see Marek working with either James or Christian learning from both of their wealth of knowledge. Marek is a great asset to our kitchen with his willingness to provide great food and always ensure the customer has an unforgettable experience with us.
